These probably won’t last too long as they’ll smell so delicious they’ll get eaten…Once they’re hanging on your tree they’ll probably go stale so they’ll be safe!
The beauty of these is that you can leave them completely plain and use pretty ribbon, or go to town decorating them with icing, sprinkles, glitter etc!
You’ll need some shaped cookie cutters or a sharp knife to do them free-hand! Try hearts, stars, trees, angels etc
INGREDIENTS
350g / 12oz plain flour
175g / 6oz light soft brown sugar
2 teaspoons each of ground ginger & cinnamon
100g / 4oz butter – softened at room temperature1 teaspoon bicarbonate of soda
1 medium egg
4 tablespoons of golden syrup
WHAT TO DO:
Pre-heat the oven to 180°C / 350°F / Gas Mark 4
Mix the dry ingredients and butter in a mixing bowl until crumbly.
Add the wet ingredients (syrup and egg)
Mix until it forms a firm pastry
Leave to rest for 15 – 30 mins in the fridge to firm up
Use a rolling pin / bottle to roll the pastry out to about 5mm thick. Make sure the surface and the rolling pin are well dusted with flour.
Cut out the shapes with cookie cutter / knife
PIERCE a hole near the top with cocktail stick etc so you can hang by ribbon. Make it big as it will close up when baked
Place the shapes on a greased or non-stick baking tray(lined with baking paper)
Bake in the oven for 10 minutes.
Decorate!
